pumpkin soup and more

Black Bean Pumpkin Soup

3 15 1/2 oz. cans of black beans, rinsed and drained
1 C drained canned chopped tomatoes
1 1/4 C. chopped onions
1/2 C minced shallots (didn't use)
4 garlic cloves minced
1 Tb and 2 tsp. ground cumin
1 tsp salt
1/2 tsp. pepper
1/2 stick butter
4 C chicken broth
1 16 ox can pureed pumpkin
1/2 C sherry vinegar (sometimes I just use white wine and a dash of vinegar).

Puree beans and tomatoes in blender. Cook onions, spices, and butter. Stir in bean puree. Stir in broth, pumpkin, and sherry. Season with salt and pepper. When you serve, garnish with a dolop of sour cream (and pumpkin seeds if you'd like!)

I know, I know––I'm sure I've reposted this before since I first wrote it in November 07, but it's just that good. A hearty, healthy fall soup. Connecting to Chari's Happy to Design for Sunday Favorites.

  1. I believe you--it's "just that good". I have, however, put shallots on my list because I love their mild and smoky flavor and a half cup is a lot of flavor.
    I'm thinking I'll serve small cups of this to my Muse book group on Wednesday evening.

  2. I want to eat this now, and it's 10:14 pm, and my stomach is still full from dinner. Ever since the Fall chill has rolled into our fair city, I've been craving all things pumpkin. I bought pumpkin pie spice, and will soon by making pumpkin creme pies! I will add this to my list of Fall soups to make soon. =) (Thanks for your nice comment on my most recent post by the way.     I'm so happy to see you for Sunday Favorites again this week, sweet friend! What a great post to revisit...it's my first time to see it so I'm glad that you chose it! I have to admit that I have never had pumpkin soup before, however I love pumpkin and I love soup...sooo...I'm sure that I would like it! It really sounds delicious and would be so perfect for a cool autumn day or evening meal! Thanks for sharing your recipe with us for Sunday Favorites!!!

    PS...oops, I meant to ask...in the recipe it calls for sherry vinegar. Is that the same thing as cooking sherry? I don't know if I've ever seen sherry vinegar.

  7. Somebody just recently told me they made a soup that sounds just like this, it sounds wonderful! My friend said it was very good, if I had a pumpkins I would make this.

  11. I made this soup for tonight and thought it was a good low cal recipe for watching my weight. Delicious. It turned out to be 85 and humid here in my area of GA today so not a real Fall day to eat soup. I ate it with the air conditioner on and wearing shorts and a tee and flip flops. Will definitely repeat his recipe when it cools down a bit more. Thanks for sharing.
