Easter Fare

A quiet Easter, with a focus on celebrating the resurrection of our Lord. Because of illness in our extended family, we were only three at our table.
But I decided to make a special meal and make some new recipes. It took a bit of planning to have it ready when we arrived home from church but it worked and actually was delicious!
Pulled out the old blue plates, and found these beautiful toile paper napkins someone had given me! Perfect.
And yes, chalk eggs, can you believe it? But love the pastel colors. Speaking of eggs, we hadn't had deviled eggs in a long time. This time I added some salsa in the mix and we loved the extra flavor.

Menu: Portabella pork loin; roasted fingerling potatoes, artichokes, onion, and cauliflower; green salad; from-scratch no-knead parmesan whole wheat rolls; and not-so-patient peach tea.
For dessert: Fresh strawberries with honey-yogurt.
Good to the last bite!

  8. Looks like you had a wonderful time for three.

I loved the vegie combo. That was a unique combo for me. I do adore my vegies...hmmm I even have some cauliflower in the fridge. I have never tried roasting it though as I have other vegetables.

Strength and healing to you and your loved ones.

  12. So sorry to hear about the illness in your family. Hope that things are better now.

I didn't do deviled eggs for the first time in years. As a southerner, they are an important part of Easter and picnics.

Lovely table setting and delicious menu.

    Best,
    Bonnie

  13. How clever to use the chalk eggs -- those soft colors are perfect! I love the flowered linen in the center of your table, and those crystal sherbets are swoonworthy, especially filled with strawberries!

  14. All that food made me hungry, it looks so yummy! and it is lunchtime!! lol
Your table looks great, I have those same glasses but mine are pink! Love them! Your Easter Eggs looks so pretty. Since my kids are all grown I never color eggs anymore,
but that reminds me of how fun it is to have them. So sorry for the sickness in your family, hope all is well soon.
    Blessings, Nellie

  15. Looks like you had a feast even if you were only three. Your deviled eggs look wonderful and I like the addition of salsa which I will try. My SIL loves deviled eggs and I made them for Easter too but mine were not as flavorful as yours. I assume you just added a tablespoon of Salsa. He likes spicy so I think I will use spicy/hot salsa when I make them. Thanks for sharing your photos with me.
