no egg on my face

My current low carb breakfast is two soft boiled eggs with cottage cheese, and whatever
 else I may want to throw in for flavoring or interest. It's funny how certain things take us back 
in time or remind us of someone. Every time I soft boil an egg I think of Becky, a friend 
in nursing school. She had one every morning at breakfast and she'd sit across the table from 
me and crack it in half perfectly. I'm not that great at doing the soft boil just right, 
but the other morning it was perfect. Not by intention, but I think I forgot it on the 
stove for a minute longer than normal. It was so beautiful, (hear a sigh?) 
and it is simply amazing that the camera was nearby.
I saw such beauty in it. Look at the color of the yolk. And there is so much to marvel about in an egg 
and how it all works ... and all you with new chicken coop projects will really marvel ...

  2. I LOVE eggs, but some mornings just don't take time to fix them!

    I actually prefer hard boiled, maybe I should just boil some eggs up, keep them in the fridge, and VOILA - - - breakfast!

    The egg yolk has that perfect glossy look to it. Soft boiled eggs with toast fingers were a favourite of mine growing up.

    My mom made us soft boiled as a kids and I didn't like them at all. Now, I love! Made me smile thinking back.

  12. My Mother in law used to make the boys soft boiled eggs and cut the toast in fingers for dipping. They loved it. Your eggs look delicious. V

    My MoMa began her career as a Nurse...then decided it wasn't "her cup of tea" and became a beautician. She made the best soft boiled eggs EVER!!! This is making me hungry! Lovely...perfect egg!

  23. I think of my cousin's grandmother and eating them out of egg cups on a Sunday morning.

    I eat (1) hard boiled egg ever morning - much easier to do a batch on the weekends and just grab one in the am. Why low carb? Diet restriction? I'm doing gluten free for my fibromyalgia.

  24. I not do so do well with eggs, for I have to doctor them up so much, before I prepare them, even in recipes for cakes. You have certainly made the egg look lovely though!

  27. It's funny -- I love hard boiled eggs and not soft boiled, but I prefer eating runny," over easy" eggs the best! I guess it is the dipping of bread into the yolk that I like so much. I have a hard time with a low carb diet but I've also been trying to stay on one.
