Calico beans has become a favorite family meal, especially good for a large group on a cold fall evening. The recipe usually calls for a can each of lima beans (I often use a package of frozen), baked beans, kidney beans and white beans. Drain all the beans except for the baked beans. Add a pound of browned ground beef or ground turkey and 6-8 slices of bacon chopped fine along with 3 tsp dry mustard, a cup of brown sugar, some catsup or tomato sauce, and 2-3 Tb vinegar. The recipe is flexible and I made it in a crock pot yesterday, substituting black beans for the lima beans, so it was not as pretty as with the green limas. I had more room in the crock pot so decided to add a can of pumpkin puree. It was thicker, but delicious and so nutritious. The Gardener could detect the difference right away and said he preferred the original calico beans, so we'll see what I do next time!
Calico beans are always good with bread and a salad, so I picked up these slightly expensive rolls on a whim (Sara!) at Tar-get. They were P R E T Z E L rolls -- I've never had these before, but they took me right back to the streets of Manhattan and how we loved to buy hot pretzels. Tasted very similar. Yummy.

A variation of your recipe has long been a favorite around here but I haven't done it in awhile. You've inspired me to add ground beef and do it all in the crockpot. I can even add the pumpkin from the beginning and Andrew won't know the difference. I'm also making a T. run today and will look for those rolls. We do have pretzel bread in a French-style loaf in the grocery store.

Dotsie, I have a bean soup recipe that is very similar and I LOVE to use it to feed the masses... Usually with cornbread, because you DO KNOW how a good bread makes any meal special. LOL! ReplyDeleteI have a similar recipe that I copied from The Stars and Stripes military newspaper when we were serving in Germany in 1981. It is a family favorite and all our friends ask for it whenever there's a potluck. I love how it stretches a meal - I'll often make it when I'm having a crowd.

Beans are so delicious, and these are no exception, especially with bacon in them. I'll have to try this one day. Interesting rolls...did they taste like pretzels? Whimsy is wonderful!

ReplyDeleteHahahaha -- love the look of this -- I LOVE one pot bean dishes. This looks wonderful but I'll also substitute black beans for limas, as limas and I have not been on speaking terms since I decided when I was little not to like them.
Tried them again as a grownup -- nope, still taste like dust balls to me. But LOVE the other beans - how odd!

Mmmm..I love a soup full of beans! I've been eating more vegetable based diet lately trying ti do a healthy weight loss, and beans have been keeping me full!

I have had pretzel roles before and they're really good but can't find them in the stores by us. Perhaps a specialty bakery.
