I found some already cooked lentils in the produce department the other day. The work of soaking and cooking was already done for me. I loosely followed the directions on the box with my own additions. It went something like this:
Chop and saute one onion, yellow sweet pepper and fresh spinach in olive oil and garlic. Add one finely chopped turkey kielbasa until slightly brown. Add lentils and one can of finely chopped tomatoes. Heat through.
I think I may have dusted it with a bit of feta cheese and served it over rice with veggies on the side.
The surprise was that it was so, so delicious. The Gardener l o v e d it. We had enough for a second meal and the final bits joined a soup pot.
I've never seen pre-cooked lentils before. I did come across precooked soy beans a few days ago. These look delicious and healthy--a winning combination.

ReplyDeleteAlways great to find a keeper recipe! It looks yummy and hearty. Turkey kielbasa is a favorite around here because it's flavorful, healthful, and more economical than many other meats.

I have never eaten or cooked with lentils but it's noon time and I'm hungry so it looks delicious to me. :) I love getting 2 meals out of something that tasted great the first time don't you?

Lentils are favorites in our house...I made curried lentil soup for dinner last night...in all the years I have used lentils I have never soaked them.
ReplyDeleteThat would be a very delicious combination. I have never soaked lentils, just throw them in the pot and it takes about 30 minutes for them to soften for eating. I love to make "Spanish rice" with lentils and rice combined, and throw in a packet of taco seasoning. Yummy!
