doctoring soup

It's November already and no post here on soup? Something's not right! Soup is my favorite, versatile food, and one of the reasons I like winter so much. I guess "retirement" has been so busy I haven't had time to make soup from scratch. But when I grab a can of soup, I can't leave it alone. Today we had some canned chicken vegetable soup. I added:

one can of red beans
garlic and onion seasoning
Chili powder
a little chicken paste
a cup of low sodium V-8
3 Tb. or so of cottage cheese
Feta Cheese garnish.

It just makes it a bit more special, delicious. and a home made "flare!_

  3. Oh my, so easy and soo good looking! I love soup and hubby likes anything with beans, so this is perfect, as the evenings are cold here at the Andes. Thanks darling friend for the recipe and hugs to you and your Little ones.

  7. Podso,
Retirment...busy??? Those two terms somehow don't quite go together! Ha! Glad you're keeping busy, dear friend! Love what you did to the canned soup. Very creative.

  8. Your soup looks delicious, but I am having major SOUP ISSUES just now.

They ADDED soup and croissants to our coffee shop menu at the library.

Keeping the soup at the RIGHT temperature, fiddling with it to keep it "right" all day long, cleaning up after it and putting away left overs at the end of the day, thawing and then baking croissants - - - these things have become NIGHTMARES to me in the coffee shop.

    Sigh.

  9. I have never added cottage cheese to soup! Now, I'm going to have to try that. Isn't it crazy how busy "retirement" from your regular job can be? blessings ~ tanna

  11. There's nothing better than a pot of home made or doctored soup on the stove . Your additions are most creative. I enjoyed the Borsht that my husband made yesterday. He used leftover beets and just kept adding things and the result was mouthwatering.

  13. I love soup! Yours looks yummy! Is chicken paste the same as chicken broth (the kind that comes in the jar and you need to keep it refrigerated?).

  14. I think that qualifies as semi- homemade. My husband does the same thing. He's like that in life...likes to embellish (: Have a wonderful Thanksgiving.

  15. Canned soup definitely needs to be doctored up. I used to eat it a lot and fed it to the kids when they were little, but once I started making so many different homemade soups, I never went back to canned. Homemade is just so much better. I even made a second batch of tomato soup today to have with the olive bread I made yesterday. Boy oh boy is it good! :) Best wishes, Tammy

  16. P.S. I unraveled the shawl. I only have two skeins of the yarn I was using and can't get anymore, so I am going to use the same pattern but make it thinner to make a scarf rather than a shawl -- will work up much quicker, too. :)

Wow! This looks and sounds delicious! And perhaps this might be the solution to getting Hubby to eat more soup! Where there's a will... :)
